Abstract
From time to time it occurs that the Coffee Board of Kenya has to reject some consignments of coffee due to very poor quality.It also happens that a sudden drop in quality occurs of some consignments sent in by coffee factories which do commonly deliver high grade coffee.In most cases it can be traced back that those drops in quality or rejects are caused by a sudden peak crop brought into those particular factories due to sudden ripening of the coffee cherry in the fields so that the factory and in particular the factory management could not cope with such a big input.One can imagine that much money is lost in this way. This article,tries to show ways and means on how to handle sudden peak crops in an economic way without loss of quality and quantity.
