Abstract
Ethiopia has traditionally produced unwashed coffees, but there has recently been some expansion of the mild sector of the industry and this trend is almost certain to continue.Certain factors which influence the quality of Ethiopian mild coffees have been investigated at the Jimma Research Station and this paper describes the studies on fermentation methods,and certain other related factors, which have been carried out to date.Much of this work was intentionally a duplication of studies done in East Africa,as it would have been quite wrong to assume that the results of such work would automatically apply under the very different Ethiopian environment.
