Abstract
The high cost of Production of cereals which constitute the major source of carbohydrate in poultry diets has necessitated the search for alternative ingredients to replace wholly or partially these cereals. The use of root and tuber meals for this purpose has been investigated by various authors. Yam, cassava and plantains are common starchy, tubers and fruits which are utilized as human food in one form or the other in Nigeria and many other parts of the tropics. They can be eaten boiled baked or fried and can also be processed into flour, "fufu", "elubpo", or gari".
