Abstract
Inspite of the fact that Okrassa and Guardiola driers have been in use 'in East Africa for about 30 years,no method of operation has come into use which prevents damage to the quality of wet processed Arabica coffee compared with nor al sun drying on tables or barbecues.The best results have probably been achieved by “pre-drying in the sun .to ' remove surface water; drying to the hard black stage at all inlet temperature of l20_l6.0°F.; maturing in sacks for several weeks before dispatch.
