Abstract
The prospects and problems of commercially utilizing game as a meat source present some very exciting and challenging opportunities. Perusal of the available Merature makes it evident that there are many unsolved problems both technological and public health, related to the processing, preservation and distribution of game meat. Uppermost are such problems of how best to deal with the zoonoses: diseases transmissable between animal and man; how to properly preserve game meat; and what environmental and handling conditions will assure getting the meat to the consumer in acceptable quality. There are also other important problems such as what is the potential demand for game meat; can game be economically processed and preserved; what are the marketable by-products and how can they best be produced; and what are the problems of economics of sale?
