Abstract
The prime interest of chocolate manufacturers with respect to the quality of cocoa beans lies in the flavour they produce after roasting and processing. Manufacturers are also interested in bean size, shell percentage and butter fat content but these factors are largely outside the control of growers and are not covered by grading regulations
