Abstract
Processing is a very important activity in coffee production and plays a crucial role in quality determination.Coffee processing involves a series of stages each of which has a distinct purpose and should be clearly understood by the Factory Manager for proper control. Basically, there are two methods of coffee processing which vary in complexity and quality of the coffee Viz. the wet method and the dry method.The wet method is the one predominantly used in processing Kenya's Arabica coffee and gives better quality coffee compared to the dry method.
