Abstract
It is generally agreed that potato production in Mauritius could be increased, to the benefit of the economy, if consumers were provided with good quality locally processed potato products such as crisps and French-fries. In Mauritius, potatoes are grown in lowland tropical conditions where the application of research relevant to established potato processing industries in developed countries where potatoes are predominantly grown in temperate climatic conditions might not be directly applicable. Available reports which are applicable to Mauritius have mostly studied isolated components of the whole system of producing potatoes for processing. This thesis represents an attempt to investigate the complete system of producing potatoes, from the selection of varieties and to the performance in differing field, storage and processing environments.
