Abstract
Several plant species were analyzed for their leaf protein content. Of the more commonly eaten species, Gynandropsis gynandra and crotolaria brevidens ranked highest in leaf protein content. Leaf protein was found to depend largely on the plant age. The significance of the various methods used in cooking leaf vegetables in terms of supplementation of each other's protein deficiencies is discussed.
