Abstract
Carcass profile presented are on four female crossbreeds between Red Sakata males and West African dwarf female goats. Mean values for dressing percentage, shrinkage and edible portion are 42.9, 2.m and 82.1 percent respectively. The primal cuts account for 87.95 percent of chilled carcass weight. The lean component for various joints vary from 60.05 to 70.2 percent with a lean to bone ratio of 4: 1 in the combined leg and loin. Organ component vary from 0.22 percent (spleen) to 2.27 per cent (heart) of the live shrunk weight. Proximate analysis of the tissues are also given.
