Abstract
Plants of the genus Brassica to' which rapeseed belongs are characterized by the presence of specific goitrogenic substance which appear in the plant in biologically inactive form called glucosinolates [8]. Glucosinolates are important for the utilization of rapeseed both qualitatively and quantitatively and although distributed throughout the plant they occur in the highest concentration in mature seeds [7].
