Abstract
The wet coffee processing forms a vital link between production and coffee merchandising. The paper analyses cherry delivery patterns, processing costs and constraints from 91 randomly sampled cooperative processing factories in Kenya.During the period under review,1987/88 to 1991192, there was a significant decline in cherry deliveries which in turn adversely affected capacity utilization of the factories.Low economic performance as manifested by high unit processing costs and operational charges was also evident.Coffee drying, staff training and electrification of factories were identified as constraints hindering improvement of both technical and economic performance.
